Banana Choc Chip Muffins

Introduct
On Thursday for our last practical we made banana choc chip muffins personally I didn't like them they just didn't taste right now this could have been we didn't make them right or it could be the recipe I don't  know. 

The Make over 
When we made the banana choc chip muffins Miss Hindson made a few modifications to the recipe for example Instead of using butter we used canola oil and we replaced the baking soda with baking powder, Instead of using just white f;lour we went half and half with white flour and wholemeal flour,We Reduced the sugar, choc chips and the quantity the original recipe was meant to make 6 big ones 9 medium and 24 small ones. 

Sensory evaluation:
Our groups banana choc chip muffins tasted weird like they were off and the texture want all flaky and dry the smelt alright I guess but it wasn't my favorite aroma They looked golden and the chocolate chips were still intact.

Outcome:
Our group worked reasonably well together and we all participated in the cooking and the cleaning up.
The overall outcome of the banana choc chip muffins i Wasn't particularly happy with i feel they could have been better.

Smoothies

Image result for different colored smoothiesLast week practical we made smoothies we split up in to four groups of four and made different flavours of smoothies our group had to make a dairy free option and we named it cracking coconut the other groups were rainbow blend berry blast and banana breezy. Ours was really yuk it tasted bland and smelt bad and we didn't blend it properly and it had big chunks in it. Rainbow blend wasn't exactly the best but it was better than ours i feel it had to many flavours that didn't exactly go well together it was thick and turned out purple and smelt weird. The next group berry blast it was good but wasn't my favourite i think it was quite bitter and could have used something with a natural sweetness it smelt alright actually but texture was quite runny. the last group was my favourite banana breezy it was the perfect texture with the right amount of thickness and smelt really nice the colour and i really liked how they sprinkled some cinnamon which added a really nice flavour to the  smoothie.

Mac 'n' Cheese

Mac 'n' cheese
Last week for practical we made macaroni and cheese we made a roux sauce and we added garlic chopped up bacon and onion to our macaroni and cheese. the outcome was alright but i wouldn't pick it over any of the other practicals. Our team worked alright but i know we could have worked better we baked it in the oven which i didn't know that is  what you do with macaroni and cheese but i feel that actually made it better.

Steak Sandwich

Image result for steak bread rollLast practical we made a steak sandwich and we added lettuce tomato pickle and more veg when we were cooking the steak we added chilli sauce and soy sauce to give it some extra flavour.
I think our team worked really well and had great communication.

Spaghetti and Meatballs

Spaghetti and meatballs
Last Thursday we made spaghetti and meatballs during this practical our team had great communication and worked really well together we made our meatballs from scratch and added lots of herbs and spices to add extra flavour Mrs Hindson made our sauce before hand so we had the chance to focus on our meatballs and pasta.We added Parmesan on top to add that extra taste of goodness and we got the chance to add any other things to the dish if we felt like they needed a little bit more flavour.

Chicken Stir-Fry

Chicken Stir-fry
On Thursday last week for our practical we made chicken stir-fry and we added lots of healthy vegetables  and mixed in some sesame oil and made a combination of Chilli sauce, soy sauce and honey this made the chicken taste really good and added a lot of unique flavours to the dish. Our team worked really well together and we had good communication and managed to finish our dish on time. I learnt some new techniques with slicing the capsicum and other vegetables we made sure that we sliced our chicken thin so it would be quicker to cook and we made sure that we put the 2 minute noodles on at the right time so that they were still hot when we served them. At the end after we had 
finished our chicken stir-fry we had the chance to add some extra seasonings and this made the dish extra tasty because it added  more of a kick to the dish.

Vegetarian Nachos

On Thursday in home economics we made vegetarian nachos.
Image result for vegetarian nachosOur team had good organisation and preparation but we didn't exactly have the greatest communication. After we had finished our vegetarian nachos Mrs hindson got some of the teachers to come and judge our food overall we got 3rd place on average. We did have a little misunderstanding with a hot pan and plastic so one of our group members got sent out and we had to work with 3 people instead of 4.

Chocolate Cookies Recipe

Home Economics 

In home economics we have been finishing some of our work and have been working on a practical recipe 
.

Chocolate chip cookies 
  • 200 g butter                     
  • 1 cup brown sugar                             
  • 1 cup white sugar         
  •  2 eggs                                                             
  • 2 tsp vanilla essence            
  • 3 cups flour                          
  • pinch of salt
  • 1 tsp baking powder
  • 2 cups chocolate chips


Preheat oven at 180o  bake
  1. Cream butter and sugar using a wooden spoon.
  2. Add the egg and vanilla essence beat well.
  3. Sift the flour and baking powder and add to the mixture.
  4. Add the chocolate chips
  5. Mix together to form a firm cookie dough.
  6. Use a tsp to scoop out the cookie dough. Roll into small balls with the palm of your hand.
  7. Place on a tray lined with baking paper.
  8. Press lightly with a fork 
  9. Place in oven for 8-10 minutes until lightly golden in colour
  10. Cool on a wire rack



Feedback From Own Recipe Practical


Practice 1:Love the crunchy outside and chewy centre
Too much sugar. Granules visible on base of cookies
Too many chocolate chips. Are the chips too small?
Very sweet and too many chocolate chips
Cookie a bit overcooked? Preferred the paler look of the other cookies


Practice 2: chewy, crisp and excellent lovely thanks, good mix of cookie and chocolate. Perfect cookie! Crisp outside, chewy inside, perfect cookie.
Chewy, nice, good ratio of chocolate and nice color.
Yes, chewy which is great, maybe a little pale though expected very great overall, much better than last time than the commercially produced ones.

Alternatives 


How could we make our recipe lower in sugar?
We could replace the sugar with honey or maple syrup.


How could we make our recipe dairy free?
We could replace the butter with olivani or canola spread.


How could we make our recipe healthier?
We could replace the chocolate chips with apricots and cranberries. 

I My thought on this recipe is that it worked really well and the total outcome was really good. This recipe is fantastic and I would highly recommend, it has a quick cooking time and the actual cooking has a crisp outside with a gooey soft inside and it tastes delicious
